When I went to college in Kentucky we went gigging one night! This was new to me and a little scary. We walked a small creek through woods at midnight with a pitch fork looking for gar. We got one abot 2 foot long. I guess they are a real boney fish! They are allow to gig for fish In Kentucky. They are also allowed any number of hooks on a rig!

Using a hacksaw, cut them into about 2 inch lengths, removing the guts piece by piece. Smoke til tender. The meat will slide out of the tube of skin. They're not bad at all.....
