Edible flowers add a special touch to salads. Once the salad has been tossed with dressing, pick off petals from edible flowers and toss them on top. Many flowers have a strong flavor, so use a light hand when adding them to a salad.
Nasturtium: Available in a scope of colors. Both flowers and leaves add a peppery flavor to mixed greens.
Calendula: A prolific grower, calendula blossoms grow in abundance. Sprinkle individual petals lightly on a salad.
Herb Flowers: Basil, chives, dill, fennel, and arugula flowers all add a spark of aromatic flavor and a burst of color to salads.
Viola: Whether wild or cultivated, delicately flavored violas jazz up a bowl of mesclun greens like nothing else.
Borage: Intense blue star shaped flowers add a burst of color that contrasts nicely with greens. The flower's delicate flavor tastes similar to cucumber. Separate the flower from the stem for a softer texture.
I never have and don't plan on eating any of my flowers. I see people on tv eat pansies on a salad. I just think I will pass on that.

I have those violas everywhere in and around my flower beds. And they are hard to pull up too.

I enjoy looking at flowers, I don't think I would eat them. Not on purpose anyway.

buzzie, you can buy a salad there with flower petals?? cool They don't do flowers in my town. I think I will request a few next time I go out to eat. I can imagine the look I will get. ;D

They'd prolly put a bitterweed in there spydie. I imagine in Memphis or Nashville they do things like that and honestly I would think maybe at a couple of the upscale places there in Jackson they might.

I worked at a fancy place one time... many times I felt like I was Julia in Pretty Woman. They just did not make sense. One of my jobs was to make sure everyone's bday had a cake of their choice. The first one I ordered was a LOT of money. Since the job before that one was at a homeless shelter, where all funds were watched very closely I asked if it was ok to order. Yep. (they found it odd I asked) ooooohhhhhhkayyy I ordered the cake of choice and it came with flowers. The lady at the bakery filled me in, but those fancy people weren't sure they could eat em, till I did. Either that or they were waiting to see if it were poisoned. A few cakes later, I couldn't find the one the person wanted, except at a bakery much closer to MY home. Boss made me get 2 cuz she didn't think there would be enough to feed all. Lordy, those cakes went on forever!!! and at about 1/3 the price.

Yeah, the fancy restaurants sometimes have edible flowers on their salads and as garnish. Some of the bakeries will make the cakes with edible flowers too, like wedding or birthday cakes.
