My dad and oldest son's favorite dessert. And real easy to make.
Company Cheesecake
Crust:
1 3/4 C. fine graham-cracker crumbs 1/4 C. finely chopped walnuts (or pecans) 1/2 tsp. ground cinnamon 1/2 C. butter, melted (do not substitute margarine)
Combine all ingredients listed above , mix well. Press on bottom and up 2/3 of sides of 9-inch spring-form pan.
Filling:
3 egss (well beaten) 2 - 8oz. packages cream cheese, softened (do not use lite) 1 C sugar 1/4 tsp. salt 2 tsp. vanilla 1/4 tsp. almond extract (or almost any other flavor you like) 3 C. dairy sour cream (do not use lite)
Blend all ingredients well with mixer, pour into crust.
Bake at 375 degrees about 35 minutes, or just till set; cool. Chill 4 to 5 hours or overnight. Filling will be soft. Serves 12 to 16
Topping:
Can be topped with any canned pie filling. Raspberry, boysenberry, blueberry or cherry are favored in my family, but any other filling will work well. Or can be eaten without topping and still is great.
