Possum and Taters
Ingredients: 1 young, fat possum 8 sweet potatoes 2 tablespoons butter 1 tablespoon sugar salt
Directions: First, catch a possum. This in itself is excellent entertainment on a moonlight night. Skin the possum and remove the head and feet. Be sure to wash it thoroughly. Freeze overnight either outside or in a refrigerator. When ready to cook, peel the potatoes and boil them tender in lightly salted water along with the butter and sugar. At the same time, stew the possum tender in a tightly covered pan with a little water. Arrange the taters around the possum, strip with bacon, sprinkle with thyme or marjoram, or pepper, and brown in the oven. Baste often with the drippings.

That was and still is one of my fav I have the series of the hillbillies. You know it is funny alot of folks really does think that I am from the South or from Arkansas and I'm not. But my nephew when was growing up and clear up til the day he died would introduce me as his hillbilly aunt and from Arkansas.LOL My sister would tell him that it wasnt nice and wanted to know why he always said it and he would say that everytime that he seen me no matter rain, sun or snow that I was always barefooted and then when I was pregant and barefooted well he said then that he knew for sure I was a Hillbilly

Hmmmm, I'm always barefoot, and was barefoot when I was pregnant too (my mother just can't understand why, she ALWAYS wears shoes). Guess I'll have to tell her that's my real daddy's fault too!

Well, Im not a hillbilly but I dont wear shoes all the time either. I own quite a few pair (atleast 30 something) but usually I slip on my flip flops so that I can take them right back off as soon as I get in the car or wherever I am. But, if I am going somewhere nice and have to have shoes on then I will wear them.
