2 cups all-purpose flour One half cup powdered sugar 1 cup butter, softened (no substitutes!) 4 eggs beaten 2 cups sugar One quarter cup lemon juice One quarter cup flour 1 tsp. baking powder Additional powdered sugar
Combine flour and powdered sugar; add butter and mix until crumbly. Press into a greased 13 x 9 inch pan. Bake for 20 minutes at 350 degrees until lightly browned. Combine eggs, sugar, and lemon juice. Stir in flour and baking powder. Pour over cooked crust and bake for 25 - 30 minutes at 350 degrees. Allow to cool and dust with powdered sugar and cut into squares

I been playing around with the idea of instead of sprinkling on powdered sugar, putting a meringue on these like ya do a lemon meringue pie. Guess I'm gonna hafta try that some time, LOL
