Getting on toward the end of the month, so I'm getting "inventive" with my meals again. ;D Made this one for lunch today and it don't taste bad at all. will taste even better I'm sure after it's chilled fer a couple of hours.
1/2 lb. salad macaroni 1/2 to 3/4 cup chopped red apple (chunks are bite sized) 1/2 cup slices of ham, cut into strips 1/2 cup frozen petite green peas (unthawed) 1/4 cup mild cheddar cheese cut into chunks 1/4 cup mozzarella cheese, cut into chunks mayonnaise (enough so the salad isn't "dry", you'll have to add a bit more when you serve it cause the macaroni absorbs it) mustard to taste pepper
Mix all together, chill and serve for lunch or dinner with french bread or garlic bread.

we're gettin' creative here cuz it's a tad warm to want to be cookin' and hot food just doesn't even sound good.....

That's what I do during summer, or use the crock-pot. I don't mind the hot food so much, long as I don't have to stand over a hot stove cooking it, LOL. I also added 1/4 cup of chopped celery to this. Tasted real good, had the left-overs for lunch today.

That sounds delicious! On the macaroni, is that 1/2 pound before or after it is cooked?

Before it's cooked tentfire. Makes plenty, especially with the "kitchen sink thrown in, LOL. You could add any kind of veggies to it with the ham and cheese. I'm thinking of trying broccoli and shredded carrots next time.
