After running outta whatever store bought coatings I was using, I just read the ingredients and used trial and error till I got sumpthin close to what I liked. I did wanna try to make it somewhat low salt. And as I mentioned in another post, I like the corn flavor, just not so much the grit as was in most coatings.
5# corn flour
1# corn meal
Bout three bottles of Mrs. Dash's lemon pepper seasoning.
Some garlic powder
Some black pepper
Some Old Bay seasoning
Some Red Pepper
When I say some, I mean bout a tablespoon on some things and bouta teaspoon of others. Just whatever yer personal taste is.
Mix everything into a gallon jar and shake and roll around to mix.
I use a gallon bag to shake and coat the fish in. Dip out some coating and add some fish, then add some more coating, then shake. when yer done, discard the bag and whatever stuff is left in it. One batch should last ya thru several pounds of fish.
Make sure yer oil is somewhere tween 350* and 375*. Use a thermometer or cheat and drop a teeny piece of coating/fish/ball (you'll get the picture) in the hot oil and if it pops right back up to the surface, its just right.

This is a dry batter so don't completely dry your fish before coating. I usually take my fish out of the water and just give it a slight squeeze before coating.
2 cups yellow cornmeal
1 cup flour
1 tblsp garlic powder
1 tblsp cajun seasoning
1tblsp black pepper
1 tblsp lemon pepper
1 tsp Old Bay seasoning
Coat your fish and deepfry until golden brown.
