HB told me who to ask for a sugar free peanut butter fudge recipe - but I've already forgotten. So, if anyone has one, I'd really appreciate it. Cupcake - it tastes just as good as the real stuff!
I'd love to surprise my mom (who is diabetic) with some PB fudge when she comes to visit at the end of the month. Thanks!

Mommaangel, Uncle Hillbilly prolly told you to ask me about the Peanut Butter Fudge, cause I am a Peanut Butter Fanatic. I will have to look in my mom's cookbooks but I think that she has one that is for sugar free recipes, if not then I bet that my grandma does cause she can't have sugar either. Sooo, I will see what I can do

I have this one:
Diabetic Peanut Butter Fudge Recipe 2 ounces unsweetened chocolate 10 tablespoons half-and-half 1/2 cup natural-style peanut butter 1/2 teaspoon vanilla 16 teaspoons artificial sweetener 1/2 cup unsalted peanuts, chopped
16 servings In a heavy saucepan melt chocolate in half and half. Stir in peanut butter. Remove from heat, and add vanilla and artificial sweetener. Fold peanuts into Fudge and spread on a greased plate or use the new easy release aluminum foil. Chill and cut into pieces.

Diabetic Peanut Butter Fudge
6 ounce cream cheese 2 teaspoon vanilla 4 teaspoon milk 1 package diet chocolate pudding mix 1/4 cup chopped walnuts 5 teaspoon peanut butter Preparation: Mix together all ingredients. Spread in a buttered dish and place in freezer to chill. Cut into squares. This is the recipe that the Beacon Hospital in Seattle gave me so I could make it for a few of our customers.

I forgot. I used crunchy peanut butter instead of the walnuts. I have also left out the nuts and just used the smooth peanut butter.
