Super easy, doesn't take long to prepare and the chicken comes out really moist.
Easy Chicken Parmesan
1 jar (14 oz) spaghetti sauce (I use Classico spaghetti sauce (if I'm in a hurry), either their Roasted Garlic or 4 Cheese one, or I use my own homemade sauce) 6 Tbs grated parmesan cheese, divided 6 small boneless, skinless chicken breasts halves (approx 1 1/2 lb) 1 1/2 Cups shredded low-moisture park skin Mozzarella cheese
Preheat oven to 375 degrees. Pour sauce into 13x9 inch baking dish. Carefully stir in 4 Tbs of the parmesan cheese. Add chicken, turn over to evenly coat boat sides with sauce. Cover pan with foil.
Bake 30 minutes, uncover.
Top with mozzarella cheese and remaining 2 Tbs parmesan cheese. Continue baking 5 minutes or until chicken is cooked through (will depend on thickness of chicken) and cheese is melted. Serve over hot cooked pasta (like fusilli or rotini or egg noodles) Makes 6 servings.
Serve it with a salad and french bread, or just with the bread, and you've got a quick and easy meal.
