I LOVE pickled beets sliced up in a salad. 8 medium fresh beets 1 cup vinegar 1/2 cup sugar 1 1/2 tsp whole cloves 1 1/2 tsp whole allspice 1/2 tsp salt Remove and discard greens and all but 1/2 in of the stems from beets. Cook beets in boiling water under dender, drain and cool. Peel and slice, place in a bowl and set aside. In a small saucepan, combine vinegar, sugar, cloves, allspice, and salt. Bring to a boil, boil for 5 minutes. Pour over beets. Refrigerate at least 1 hours, drain before serving. 6-8 servings *I refrigerate overnight.
